I haven't had much time to do a real blog night, but the other night, Jose really wanted to make vegan chili rellenos, so we found this recipe from Tofu n' Sprouts. They were actually pretty good for a vegan version of something so very not vegan, so I thought I would pass the link on. Give 'em a try!

Woo! So very glad you liked the "chile rellenos". I've considered naming them something more vegan ...stuffed peppers with vegan-cheezy stuff inside... but somehow it doesn't sound nearly as interesting... :)
Nope, I don't think renaming them is necessary. They are still quite literally stuffed peppers as the name implies!
